反式脂肪

一些存在于堅果、種子、谷物和豆類里的不飽和脂肪酸對于人體健康很重要。但是,有些商家為了使油脂便于保存或運輸,通常會加熱這些不飽和脂肪并在一定的壓力下加入氫,從而使其變成飽和油脂(人造黃油為了使其變成固體方便運輸,就是用這種方法制得的)。

這種脂肪經過高溫高壓的氫化作用后,它們的結構改變了,人體就不能正常代謝這些新的轉化脂肪酸——即反式脂肪或氫化油,極易造成心血管阻塞并對心臟造成壓力。最近的研究表明,吃太多富含反式脂肪的食物(奶油蛋糕、面包等)會導致癌癥發病率增加、人體從脂肪酸所獲得的健康的益處會減少。

所以營養專家建議少吃奶油類固體反式脂肪含量高的食品,平時盡量食用含不飽和脂肪的食品,例如亞麻籽油、紫蘇油、深海魚油等健康食品。
